Every November at Finca Aguilar, harvest begins at the perfect stage of ripeness and within six hours the hand-picked olives are separated by variety and crushed. Each variety of olive is cold extracted separately producing a low, natural acidity while preserving delicate flavor and fragrance. Manzanilla: An early harvest oil with big body and fruity midnotes. 100 percent natural. Sediment on the bottom of the bottle is a naturally occurring process as the olive fruit decants with time.
